We’re about to share with you a recipe that’s a little bit more special, with potatoes playing a starring role, but still full of surprises. Gluten-free vegan gnocchi – yes, they really do exist! Now you can enjoy Italian flavours 100% sin-free, without eggs and gluten, and even better, with a simple effort, because making gnocchi is a breeze! How to make vegan gnocchi?

Wash and peel the potatoes, cut into cubes and steam in a pot until soft. Leave to cool. Then mash the potatoes with a potato masher (do not use a food processor, blender or whizzer to mash the potatoes!) and add the tapioca starch and chickpea flour to the mashed potatoes and knead with your hands until the mixture no longer sticks to your fingers and you have a malleable dough. If necessary, add in kneaded chickpea flour. When the dough is ready, divide it into smaller pieces (for example, balls that fit in the palm of your hand), so they are easier to roll. Sprinkle a little tapioca starch on the dough balls before rolling and coat the rolling surface with a thin layer of starch. Then, using your hands, roll each piece of dough into a “sausage” about the size of your finger and cut it into pieces about 2.5 cm thick. Shape each piece into a gnocchi-shaped ball. If desired, use a fork to draw stripes on each gnocchi for decoration. Keep the gnocchi in a single layer on a floured base until cooked, to avoid the gnocchi sticking together. When the gnocchi are ready to roll, bring the water to the boil and add a little salt. Boil the gnocchi in the salted water in batches (don’t add everything at once) for 2-4 minutes until they rise to the surface. If you want crispy gnocchi, you can brown them in a pan after cooking if you like. Serve with anything you like and enjoy!

You can also freeze the gnocchi if you wish.
