Almond butter-banana fudge

Have you ever heard the saying that everything that tastes good tends to be sinful and unhealthy? But we have great news for you, because with the recipe we’re about to share with you, we’re going to debunk that myth for sure! The combination of creamy almond butter and sweet honey is really good, and when you add in a dash of vanilla and some banana, it doesn’t get any better. However, this creamy fudge contains no milk, refined sugar, gluten or anything else that’s not good for your health. This mouth-watering almond fudge is really worth a try!

Quantity: approximately 12 squares
Preparation time: 15 minutes + 1h in the freezer
Severity: light
It will take:

  • 85g horseradish
  • 120g natural almond butter
  • 110g coconut oil
  • ½ banana
  • pinch of salt (well, a little, to balance the flavours!)
  • natural vanilla on request (optional)
  • a mould (preferably silicone, but any mould covered with baking paper will do).

How to make almond butter fudge?

Measure the ingredients into a bowl (except the banana) and melt in a double boiler until smooth (stirring constantly). Once the mixture has melted, place it in a blender, food processor or blender with the banana and blend until smooth. Pour the mixture into a mould of your choice. A silicone mould is most convenient, but any other pre-covered mould will do. If you are using a silicone mould, you do not need to use baking paper. Let the mixture set in the freezer for an hour, then cut into squares of your choice and enjoy! If the fudge is too hard and solid when you take it out of the freezer, let it stand for a few minutes at room temperature or in a regular fridge. Be sure to store the treat in the fridge, otherwise it tends to melt.

It’s quite a hefty treat, but we can tell you under wraps that you don’t want a lot of it! The very first bite satisfies the sweet tooth and tantalises the taste buds, suitable for sweet tooths big and small.
