How to make gingerbread muffins?

Preheat the oven to 180 degrees and line a baking tray with muffin tins. Then start making the chewy pastry. To do this, in a small bowl, mix together the oat flakes, oat flour, coconut sugar and coconut oil with your fingers until a cohesive paste forms. Move aside.

In a large bowl, mix together the water, flaxseed meal, maple syrup, applesauce and coconut oil. In another bowl, mix together the oat flour, rice flour, baking powder, baking soda and gingerbread spice. Mix thoroughly. Pour the liquid ingredients into the dry ingredients and mix until smooth. Add apple cubes and vegetable milk as needed. The dough mixture should be thick, but still flow well.

When the batter is ready, divide it between the muffin tins, sprinkle with the crumbs and bake the muffins in the oven at 180 degrees for 20-25 minutes, until the muffins are golden brown and a toothpick comes out dry. Let the muffins cool and enjoy!
