Classic Potato Salad with Indian Nut Mayonnaise

Did you know that Indian nuts can be used to make an unbelievably delicious mayonnaise salad dressing? Indian nut dressing is so good on potato salad that it will disappoint even the most traditional of palates. If you’re craving nostalgic flavours but in a healthy, wholefood twist, this classic potato salad is definitely worth a try. Prepare for a casual meal or serve at a party!

Quantity: 4-6 salad lovers
Preparation time: 25 minutes (+ time to soak the nuts).

To prepare you will need:

For the salad:

  • 1 kg of steamed, peeled and cooled potatoes
  • 160 g fresh cucumber
  • 60 g red onion (1 medium onion)
  • 20 g fresh dill
  • 160 g frozen and thawed peas
  • 130 g apple (optional)

For the sauce:

  • 250 g Indian nuts
  • 295 ml water + water for soaking
  • 1 squeezed juice of a whole lemon
  • 1 fresh garlic clove
  • 1 teaspoon sea salt (or add to taste)
  • 1 teaspoon maple syrup

How to make potato salad?

First, put the nuts in the oven. To do this, place the nuts in a bowl and pour water over them so that all the nuts are covered. You can soak the nuts for a couple of hours up to overnight (or in hot water for 15 minutes). Then chop all the salad ingredients into small cubes and place in a large bowl. For the sauce, crush the nuts and add them to a blender with the lemon juice, garlic cloves, maple syrup, sea salt and water and blitz until smooth and silky. As a last step, mix the dressing into the chopped salad. Mix carefully and enjoy!

PS! The salad tastes great the next day. To do this, store the salad in an airtight container in the fridge.
