If you’re as big a fan of tortillas as we are, there’s reason to cheer! We’ve put together a wonderfully easy but extremely tasty recipe that’s perfect for making gluten-free tortillas as well as thin pancakes. All of this, of course, without additives and grain-free. No oil is used in the recipe either, making it a truly body-friendly treat. The star of the recipe is none other than tapioca starch, complemented by chickpea flour, rich in vegetable protein, with a dash of water and salt. Tapioca makes the tortillas nice and soft and rollable, while chickpea flour adds texture. Make sure you give it a try, we promise you won’t be disappointed!

How to make gluten-free tortillas?

First mix the dry ingredients in a bowl. Then gradually pour in the water while whisking. Be sure to use a whisk, not a spoon. This way you avoid lumps and the dough will be more even. You can also use a blender to blend the dough if you like. The dough has the right consistency when it resembles a liquid pancake batter. When the dough is ready, heat a non-stick frying pan and place a tablespoon of dough on the pan and spread evenly. When small air bubbles start to form on the top, flip the tortilla over and cook the other side for a few minutes. Then set the tortilla aside and repeat the process until you have enough dough. When hot, the texture of the tortilla may seem more solid, but it quickly becomes soft and elastic as it cools. Enjoy the tortillas with a savoury filling of your choice, or serve with a nice berry jam – just like thin pancakes! If you want to make a larger quantity of tortillas at a time, simply multiply the quantities.
