Healthy and oil-free vegetable “cheese” sauce with oven fries

A healthy and herbal “cheese” sauce that tastes like the real thing!

Have you ever thought of making cheese sauce from potatoes? Yes, it may sound unbelievable at first, but it is very possible! Of course, it’s not a sauce that tastes exactly like real cheese, but it’s still very tasty and has a surprisingly cheesy texture.

Even though potatoes are the main ingredient in this recipe, you may not realise that potatoes are in the sauce when you taste the final result. What a versatile tuber this potato is! Combined with the right herbs and spices, the sweetness of the potatoes is hidden and you get a deliciously silky “cheese” sauce, which, together with the crispy oven fries, will make your mouth water!

To prepare you need:

For the sauce:

  • 2 larger potatoes
  • 1 medium-sized carrot
  • ¼ teaspoon of ground turmeric (add less rather than more initially, turmeric is very dominant in flavour and can spoil the sauce if overdosed).
  • ½ teaspoon of cayenne pepper (optional)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon sea salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder or one fresh garlic clove
  • ¼ teaspoon black pepper (optional)
  • ¼ cup hot water or vegetable broth

How to make “cheese” sauce?

Wash, peel and chop the potatoes and carrots for the sauce and steam until soft. When the vegetables are ready, place them in a food processor, add the seasoning and water or stock. Pour in the liquid rather sparingly at first and add more as needed. Process the mixture until it forms a smooth, silky sauce.

For the oven fries, wash and slice the potatoes, mix with the seasoning, place on a baking tray lined with baking paper and bake at 180 degrees until golden brown (about 35-40 minutes).

PS. To crisp the fritters without oil, place them on a baking tray so that the potatoes are not piled on top of each other. This way they cook nicely until crispy all around without using any fat. Serve the “cheese” sauce with the oven fries.
