Homemade soup that tastes like grandma made it. Nutrient-rich vegetables, nourishing chickpeas, a wealth of herbs and gluten-free pasta come together in this warming soup. All this goodness comes together in one delicious and healthy homemade vegetable broth. If you’re a soup lover, this is definitely for you!

For preparation you will need:

  • 170 g chopped onions (1 medium)
  • 200 g chopped carrots
  • 120 g chopped celeriac
  • 250 g chickpeas, cooked or canned (and drained and rinsed beforehand)
  • 200 g gluten-free pasta
  • 1,8 l vegetable broth or water
  • ½ tbsp onion powder
  • ½ teaspoon of ground turmeric
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • Handful of fresh parsley (optional, to serve)
  • Sea salt (to taste)

How to make noodle soup?

Put the chopped onion, carrot and celery in a pot with a splash of water and simmer for 5-7 minutes until the onion is soft. Add enough water to prevent the vegetables from sticking to the bottom of the pot.

Then pour in the stock, onion powder, garlic powder, ground turmeric, dried parsley, dried oregano, chickpeas and paste. Bring to the boil and then reduce the heat. Cook on low heat for 15-20 minutes until the pasta and vegetables are soft. Stir in fresh parsley and season with sea salt (if using). Serve immediately.
