Delicious and crispy chanterelle pizza with Indian nut cheese

What’s a chanterelle season without one hell of a chanterelle pie? This pizza tastes just like the “real thing”, but it is 100% wholemeal, grain-free and contains no yeast. Nevertheless, even “cheese” is present on the pizza, and the whole mix of flavours is mouth-watering! No longer do you have to feel miserable on movie nights when others are snacking – make yourself a healthy pizza and serve it to your friends!

To prepare you need:
For pizza base:

  • 500 g steamed and cooled potatoes
  • 80 g potato starch
  • sea salt (to taste)

For supplements:

  • 1 teaspoon dried herb mix
  • sea salt (to taste)
  • 100 g concentrated tomato paste
  • 50 g Indian nuts
  • 3-4 tbsp water
  • ½ lemon juice
  • ½ teaspoon onion and garlic powder
  • handful of fresh basil
  • 120 g cherry tomatoes
  • 30 g onions
  • 200 g fresh chanterelles
  • 1 teaspoon maple syrup or coconut sugar

How to make chanterelle pizza?

To prepare the bottom:

First, preheat the oven to 180 degrees and prepare the pizza base. To do this, mash the previously steamed potatoes with a potato masher or fork and mix in the potato starch. Knead the dough with your hands until you achieve a stable dough ball. Then place the dough ball on a baking tray lined with baking paper and form a pizza base about 0.5-1 cm thick (you can make several small ones from the same quantity if you wish). Bake the pizza base at 180 degrees for 30-35 minutes, until it has a golden surface. While the pizza base is cooking, prepare the toppings.

To make tomato sauce:

In a smaller bowl, mix together 100 g of concentrated tomato paste with coconut sugar or maple syrup and your choice of dried herbs and sea salt.

To make Indian nut “cheese”:

Pour the nuts into a blender and add half the lemon juice, 3-4 tbsp water, sea salt, onion and garlic powder and process until smooth.

To prepare the rest of the filling:

Chop the onion, halve the cherry tomatoes and fry the chanterelles in a pan (without oil).

When the base is ready, first spread the tomato sauce on the bottom. Then top with a layer of “cheese”, tomato slices, chopped onion and fried chanterelles. Sprinkle with more herbs if desired. Bake the pizza for another 10 minutes at 180 degrees. Then let the pizza cool a bit, serve with fresh basil and enjoy!
