Banana biscuit with almonds and coconut

Melt-in-the-mouth banana biscuit with coconut

This mouth-watering banana biscuit will captivate the heart of even the pickiest sweet tooth. Soft almonds, crunchy coconut and creamy banana fit the keeks like a glove. The taste is so luxurious that it makes you wonder if it’s a healthy snack! However, we can safely say that you won’t find any unhealthy ingredients in this banana biscuit – there’s not even any added sugar, and all the sweetness comes from the ripe bananas. So that you can indulge your taste buds with this delicious pastry, we share the recipe with you.

Quantity: approx 8-10 slices
Preparation time: 20 minutes + cooking and cooling time
Severity: light
To prepare you need:

  • 500 g banana puree made from ripe bananas
  • 180 g coconut flakes (coconut flakes are a must, coconut flour is not suitable).
  • 196 g almond flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • a biscuit or loaf tin (22,5 x 12,5 silicone mould used in the recipe).

How to make banana biscuits?

Mash the ripe bananas with a whisk, blender or food processor and pour into a large bowl. In a smaller bowl, mix together the dry ingredients and then fold the mixture into the mashed bananas. Mix the dough thoroughly until smooth, then divide into your favourite biscuit or loaf tin and place in the oven to bake. Bake the banana biscuit at 180 degrees for 30-35 minutes, until the biscuit is golden brown.

PS. Be sure to let the biscuit cool completely before cutting it open to avoid excessive crumbling. It also tastes great after it has been left in the fridge.
