Lightly spicy sweet potato wraps

Slightly spicy roasted sweet potato cubes on a crisp lettuce bed is a combination you simply have to try! These vitamin-packed, juicy wraps provide your body with the nutrients it needs, while simultaneously pleasing your taste buds! In addition, the sweet potato wraps are so quick and easy to make that they are perfect for a quick snack or a light dinner. What makes the whole thing even better, of course, is that these wraps don’t need a drop of oil and they don’t contain gluten!

It will take:

  1. 1 medium sweet potato
  2. 1 tablespoon freshly squeezed lemon or lime juice
  3. 1/2 tsp cayenne pepper
  4. 1/2 tsp ground cumin seeds
  5. 1/2 tsp ground coriander
  6. 1 teaspoon of raw honey or maple syrup
  7. 4-6 larger lettuce or romaine lettuce leaves
  8. small handful of fresh herbs fresh coriander or green onion (optional)
  9. Himalayan or sea salt (optional, to taste)

How to make sweet potato wraps?

Preheat the oven to 180 degrees and line a baking tray with baking paper. Peel the sweet potato and chop into smaller cubes. Then season the sweet potato cubes with raw milk or maple syrup and spices. If desired, add a little Himalayan or sea salt. Mix well and spread the seasoned sweet potato cubes evenly on the baking tray. Bake the cubes in the oven for 15-20 minutes until the sweet potatoes are cooked. While the sweet potato is cooking, wash the salad leaves and place on a plate. When the sweet potato cubes are ready, place them on lettuce leaves and enjoy immediately!
