Melt-in-your-mouth carrot cake balls with coconut

Melt-in-your-mouth carrot cake bites that taste just like a classic delicious carrot cake, only in a healthier twist! No grams of oil, gluten, egg or spoonfuls of refined sugar are added to the balls. The taste, on the other hand, is no worse! Zesty lemon lime, sweet dates, juicy carrot and crunchy walnut form the perfect combination of flavours you’d expect from a real treat! Carrot Balls are perfect for sweet tooths big and small, and they’re handy and easy to make!

Quantity: 6-8 balls
Preparation time: 25 minutes
Severity: light
It will take:

  • 80g walnuts
  • 1 small finely grated carrot
  • 7 soft dates without stones
  • 1 lemon zest (grated)
  • pinch of cinnamon
  • pinch of ground nutmeg
  • 1 tsp maple syrup
  • 15g raisins, dried goji berries or more dates
  • 25g coconut flakes
  • food processor

How to make carrot balls?

Place the walnuts in a food processor and process until the nuts are crushed. Then add all the remaining ingredients except the coconut flakes to the nut mixture and process until the mixture reaches a smooth, malleable consistency. Then form the dough into balls and roll in the coconut flakes. Put in the fridge for a couple of hours to set and the balls are ready to enjoy.

PS! The balls are also suitable to eat as soon as they are cooked, but they will become a bit more solid and flavourful if they are left in the fridge, so it is recommended to let them “rest” in the fridge before eating.
