Silky smooth, super-healthy and delicious spinach puree soup

Who said vegetarian food is boring?! Oh no! There are so many variations, like this silky and refreshing vitamin-packed spinach soup here! Tomatoes, orange, and spinach meet in this bright green beauty, spiced up with tangy garlic and coriander or basil. It only takes a moment to prepare and a refreshing and healthy snack is guaranteed.

It takes:

  • 250g tomatoes
  • 4 cups (about 125g) of spinach
  • 1 celery
  • 1 orange juice squeezed
  • 1 clove of garlic
  • fresh coriander or basil to taste
  • ½ avocado (optional)
  • sea salt and pepper to taste (optional)

How to make spinach soup?

It’s a breeze! Put all the ingredients in a blender and process until you get the texture you like. The longer you process the mixture, the silkier the texture! 😉 Season the soup with a little salt and pepper, if desired. Serve with fresh herbs or cucumber noodles and enjoy!
