Potato pizza with pineapple and indian nut cheese

The recipe below proves once again how versatile potatoes are! Steaming it, boiling it and baking it will probably come as no surprise to you, but have you ever tried rolling it into pizza dough? To prepare you need:

For pizza base:

  • 500 g steamed potatoes
  • 80 g potato starch
  • sea salt (to taste)

For supplements:

  • 100 g concentrated tomato paste
  • 1 teaspoon dried herb mix
  • sea salt (to taste)
  • ¼ teaspoon cayenne pepper (optional)
  • 50 g Indian nuts
  • 3-4 tbsp water
  • 1 teaspoon maple syrup
  • ½ lemon juice
  • ½ teaspoon onion and garlic powder
  • 60 g chopped fresh peppers
  • 80 g pineapple cubes (fresh or in their own juice and canned without sugar)
  • 50 g chopped cherry or plum tomatoes
  • 30 g sliced red onion
  • 1-2 handfuls of fresh carrots

How to make potato pizza?

Preheat the oven to 180 degrees and prepare the pizza base. To do this, use a potato masher or a fork to mash the pre-steamed potatoes and add the potato starch and salt. Knead the dough with your hands until you achieve a stable dough ball. Then place the dough ball on a baking tray lined with baking paper and shape it into a pizza base of your liking, about 0.5-1 cm thick (you can make several small ones from the same batch if you wish). Bake the pizza base at 180 degrees for 30-35 minutes, until it has a golden surface. While the pizza base is cooking, prepare the toppings.

To make tomato sauce:

In a small bowl, mix together 100 g of concentrated tomato paste with maple syrup, herb mix, cayenne pepper (if using) and sea salt.

To make Indian nut “cheese”:

Pour the nuts into a blender and add half the lemon juice, 3-4 tbsp water, sea salt, onion and garlic powder and process until smooth.

To prepare the rest of the filling:

Chop the onion, peppers, tomatoes and pineapple.

When the base is ready, spread the tomato sauce on top first. Then top with a layer of “cheese”, diced tomatoes, chopped onion, sliced pepper and pineapple. Sprinkle with more herbs if desired. Bake the pizza for 10-15 minutes at 180 degrees. Then take the pizza out of the oven, let it cool for a few minutes, serve with fresh rocket and enjoy!
