Fried cauliflower rice with vegetables

Fried rice probably sounds familiar, but what about cauliflower rice? Yes, it really is possible! Cauliflower offers a great alternative to classic rice, allowing you to make even more room for vegetables with healing properties in your menu!

Cauliflower rice goes perfectly with a variety of vegetables and herbs, creating a great blend of flavours. The fried cauliflower rice is also a real surprise for the taste buds, as the cauliflower is not really present in the dish, but the texture and flavour are excellent. In addition, cauliflower is a truly rewarding vegetable, supporting our immune system and supplying our body with essential vitamins and minerals. This beautiful cruciferous fruit is packed with vitamins C, K and B, as well as decent amounts of high-quality protein. In addition, cauliflower is also a really powerful anti-inflammatory thanks to its omega-3 fatty acid content!

It will take:

  • 1 medium cauliflower
  • 1 teaspoon coconut oil
  • ½ finely chopped red onion
  • 2,5 cm piece of peeled and finely chopped fresh ginger
  • 3 finely chopped garlic cloves
  • 1 large diced carrot
  • 1 medium sized pepper, cut into cubes
  • 2 celery stalks cut into cubes
  • 1 glass of frozen peas
  • 1 teaspoon sesame oil (optional)
  • 2 tablespoons coconut amino sauce (optional)
  • 1/2 teaspoon of raw honey or maple syrup
  • 1 teaspoon sea salt
  • handful of finely chopped fresh coriander or thyme
  • a small handful of finely chopped almonds (optional)
  • 2 teaspoons sesame seeds
  • 1 lime juice

How to make cauliflower rice?

Chop the cauliflower into smaller florets and process in a food processor until the cauliflower becomes rice-like grains. Squeeze the excess water out of the cauliflower using a margarine, place in a bowl and set aside for a moment. In a large frying pan, heat 1 teaspoon of coconut oil and fry the finely chopped onion until it becomes slightly translucent. Add a tablespoonful of water as needed to prevent the onion from sticking to the pan. Then add the carrot cubes, chopped peppers, celery cubes, ginger, garlic and peas to the onion and fry for about five to seven minutes until the vegetables start to soften. Then add the cauliflower rice, sesame oil, coconut sauce, honey or maple syrup and sea salt. Stir well and fry for a further five minutes until the cauliflower is soft. Serve the fried cauliflower with fresh coriander, chopped almonds, sesame seeds and lime juice.
