Tasty pea puree soup

Delicious green pea puree soup

What if you made a slightly different kind of pea soup for New Year’s Eve this year – from frozen green peas? While dried pea soup is undoubtedly a tongue-twister, frozen green pea soup is also delicious but even healthier, hiding a whole host of beneficial properties (because frozen peas are technically fresh). Did you know, for example, that green peas are good for both weight loss and hair growth? In addition, fresh green peas are rich in antioxidants, vitamins, minerals, beneficial fatty acids and high quality and easily digestible plant protein. Not to mention the taste, of course – it’s absolutely wonderful. Combined with fresh herbs, green peas make a really great combo!

Severity: light
To prepare you need:

  • 1 red onion (chopped)
  • 5 cloves of garlic (crushed)
  • 2 packs frozen green peas
  • about 800 ml of vegetable broth or water (about 6 cups).
  • 2-3 large handfuls fresh basil leaves
  • 1 handful of fresh mint (optional)
  • sea salt (optional)
  • 1 lime juice (freshly squeezed)
  • 1-2 handfuls fresh coriander
  • green onions or other fresh herbs (for decoration)

How to make pea soup differently?

Put a pot or a saucepan with a higher rim on the fire, pour a quarter of a cup of water and finely chopped onion and garlic into the pan. Simmer until the squares are soft. Then add the frozen peas to the onion-garlic mixture and about 300 ml of water or stock. Simmer until the peas are soft and add about 400-500 ml of broth or water, fresh mint leaves and basil. Using a whisk, whisk the soup until creamy. Season with sea salt if desired. Serve with chopped coriander, green onions and freshly squeezed lime juice.
