Mashed potatoes and cauliflower

Creamy and refreshing mashed potatoes and cauliflower

The classic mashed potato is one you’re probably familiar with from way back, but what if you took it to a whole new level by adding a nutrient-packed cauliflower? The cauliflower adds creaminess to the potatoes and enriches the puree with beneficial vitamins and minerals. It’s a perfect substitute for the butter, cream and milk that are usually loved in mashed potatoes. The vegetables themselves make the puree so tasty that you don’t need to add anything other than the herbs. If you’re used to adding milk and butter to mashed potatoes in the past, be sure to try this vegetarian version and believe us when we say that you won’t be disappointed with the taste!

To prepare you need:

  • 4-5 large potatoes (peeled and chopped)
  • one small cauliflower head (cut into florets)
  • 0,5 teaspoon garlic powder
  • 2 teaspoons onion powder
  • 1/2 teaspoon paprika or chilli powder (to serve)
  • Fresh herbs (to serve)
  • Himalayan or sea salt (to taste, optional)
  • Steam pot

How to make cauliflower-potato puree?

Peel and chop the potatoes, cut the cauliflower into florets and place them in a steamer. Cover the pot with a lid and steam the vegetables for 15-20 minutes, until soft. Then place the potatoes and cauliflower in a large bowl or pot. Add the garlic powder and onion powder, and a little salt if desired. Puree the vegetables using a pestle, blender or food processor. If you want a silkier texture, you can also add a little hot water or vegetable broth to the porridge while pureeing. When serving, sprinkle with fresh herbs, such as parsley or green onions, and enjoy!
