Healthy and oil-free herb pesto!
What could be better than a deliciously aromatic herb pesto, bursting with goodness! Of course, what makes this recipe special is that there is not a drop of oil, cheese or anything else that is usually found in pesto. But the taste is just as unrivalled as ever with pesto. It’s such a universal recipe that you can make it from wonderful cauliflower, fresh basil leaves or anything else you fancy to go with pesto. The “basic recipe” for a healthy oil-free pesto is now in front of you!
Quantity: about 200 grams of pesto
Preparation time: 15 minutes
Severity: light
To prepare you need:
- 50-60g Indian nuts
- 100g fresh basil leaves or curl of carrots
- 1 tablespoon freshly squeezed lemon juice
- 3 tbsp filtered water
- ½ teaspoon sea salt
- for the basil pesto you can also add 1 fresh garlic clove (optional).
- a food processor or more powerful blender
How to prepare herb pesto?
Roast the nuts in a frying pan until lightly golden brown, then place all the ingredients in a blender or food processor. Press until the desired texture is achieved. Enjoy with a sourdough truffle or a gluten-free ciabatta! Store the pesto in an airtight container in the fridge. The pesto will keep well in the fridge for at least 4-5 days.
