Italian potato salad

Potatoes not only taste good, they are also a truly nutritious vegetable, perfect for salads, mashing, baking or grilling. Potatoes also make a great combination of flavours when they meet red onions, olives and tomatoes, for example, which is why they are all present in the Italian potato salad recipe below! This colourful potato salad is perfect for birthday parties, summer barbecues or as a stand-alone meal, the choice is yours! 😉

Quantity: for four
Preparation time: 30 minutes (if you use pre-steamed and cooled potatoes).
Severity: light
It will take:

  • 1kg washed and halved mini potatoes
  • 1 cup (240 ml) of cherry tomatoes, halved
  • 3 celery stalks
  • ½ finely sliced red onion
  • ½ cup of pitted kalamata olives
  • handful of finely chopped fresh basil
  • handful of finely chopped parsley
  • sea salt and pepper to taste
  • ¼ lemon juice

How to make a good Italian potato salad?

Wash, halve and steam or boil the mini potatoes and let them cool completely. When the potatoes have cooled, place them in a large bowl and add the halved cherry tomatoes, celery slices, finely sliced red onion, olives and chopped parsley and basil. Add salt and pepper to taste and squeeze in the lemon juice. Mix well and allow the salad to season for 10-15 minutes before eating.
