Healthy burrito bag

Thinking about what to bring for a beach picnic or summer barbecue? We’ve got something special for you! We believe that a healthy, grain-free burrito bag is the perfect choice for summer gatherings or a light lunch or dinner. A bowl of all that is good and better together! Crunchy cauliflower, flavoursome tomato, creamy avocado and tangy lime combine to make a really good combo that you just have to try!

Quantity: for two
Preparation time: 25 minutes
Severity: light
It takes:

  • salad mix or other green salad of your choice (e.g. romaine lettuce or spinach)
  • freshly squeezed lime or lemon juice
  • chilli flakes of your choice

making cauliflower rice:

  • 1 medium cauliflower
  • ½ teaspoon ground spices
  • ½ teaspoon ground paprika
  • ¼ teaspoon cayenne pepper or mild chilli (optional)
  • small handful of finely chopped fresh coriander

Making salsa:

  • 250-300g diced tomatoes (about 2-3 larger tomatoes or 1 can of cherry tomatoes of your choice)
  • 1 clove of garlic
  • handful of finely chopped fresh coriander
  • 1 small red onion
  • 2 tablespoons freshly squeezed lime juice

Making guacamole:

  • 1 avocado
  • 1-2 tbsp freshly squeezed lime juice
  • ½ finely chopped garlic clove
  • 2 tablespoons finely chopped red onion
  • small handful of finely chopped tomato cubes
  • Gochugaru peppercorns (organic) (optional)

How to make one delicious burrito?

Wash and prepare the vegetables. Then make a cauliflower rice. It’s best to use a food processor to make rice, but you can also grate it by hand. If you are using a food processor, break or cut the cauliflower head into smaller florets and then place in the food processor. Process the cauliflower until rice-like grains form. Then pour the cauliflower rice into the bowl and season to taste.

When the rice is ready, start making the salsa. For the salsa, mix together the finely chopped tomato cubes, red onion, garlic, fresh coriander and lime juice. Mix well and set aside for a moment. Last but not least, prepare the guacamole. To do this, mash the avocado with the garlic and add the diced tomatoes, red onion and pepper (if you like). When all the preparations are done, start serving. Put the green salad in the bowl first, then the cauliflower, tomato salsa and guacamole. Sprinkle with fresh herbs, a little lime juice and enjoy immediately!
