Crunchy Christmas almonds

Crispy Christmas almonds with cinnamon

Have you ever tried crunchy Christmas spiced almonds? It’s a real treat that will delight sweet tooths big and small. They are also suitable for hiding in a gift box or a sushi. Christmas almonds are delicious, crunchy to the tooth, just the right amount of sweetness, lightly caramelized and with a real Christmas flavour. What’s more, they’re a breeze to make – no complicated ingredients or hours of standing in front of the stove. Try it and enjoy a healthy Christmas treat!

To prepare you need:

  • 225 g almond
  • 3 tbsp coconut sugar
  • pinch of salt
  • 2 tbsp maple syrup
  • 2 teaspoons of water
  • 1 teaspoon coconut oil
  • ½ teaspoon cinnamon
  • ½ gingerbread spice (optional, if desired)
  • ½ teaspoon of natural vanilla powder (optional, if desired)

How to make crispy Christmas almonds?

Preheat the oven to 180 degrees. Line a baking tray with baking paper and place the almonds on it. Roast the almonds in the oven for 8-12 minutes (or until you can smell the roasted nuts), stirring the almonds in between. Then take the almonds out of the oven and set aside to wait.

In a large bowl, mix together the coconut sugar and salt and set aside. In a small pot, saucepan or sauce pan, combine the maple syrup, water, coconut oil and seasonings. Bring the mixture to the boil. Then lower the heat and add the toasted almonds. Cook, stirring constantly, for 2-3 minutes or until the liquid has evaporated. Remove the pot from the heat and add the almonds to the bowl with the sugar and salt mixture. Mix thoroughly, then place the almonds on a cold baking tray covered with baking paper to cool.

The almonds are softer when warm, but when cooled, they become deliciously crunchy.
