Christmas cabbage with apples in a different way

If you’re looking for a different alternative to the classic sauerkraut, try this Christmas cabbage with apples and fresh cabbage! This is a cabbage dish that is perfect for the Christmas table or served with a steak at other times of the year. A tasty, healthy and easy-to-prepare whole-grain dish with just 2 main ingredients and a little seasoning for extra flavour. It’s a dish that’s practically homemade! Simply put the ingredients in a pot, be patient and let the cabbage-apple mixture simmer. Then season to taste and the cabbage dish is ready to enjoy!

To prepare you need:

  • 1 kg white head cabbage
  • 500 g peeled apples
  • 1-2 teaspoons sea salt (or add more to taste)
  • 2-3 teaspoons coconut sugar or maple syrup (or add more to taste)
  • 1 tablespoon freshly squeezed lemon juice
  • 200 ml water

How to make Christmas cabbage?

Slice or grate the cabbage into thin strips, leaving out the root part. Then place the cabbage strips in a large pot and add 2 dl of hot water. Stir and leave to simmer under the lid for 10-15 minutes. While the cabbage is simmering, peel and thinly slice the apples and mix into the cabbage. Add 2-3 teaspoons of coconut sugar or maple syrup, 1 teaspoon of salt and 1 tablespoon of lemon juice, mix again and then let it sit under the lid for 30 minutes, stirring occasionally. Make sure the cabbage doesn’t stick to the bottom of the pot – add more water if necessary. When the cabbage is ready, season with a little more coconut sugar, salt or lemon juice if you like, and let the cabbage season in the pot under the lid for another 20-30 minutes before serving.
