Creamy avocado mayonnaise

Did you know that avocados are considered one of the world’s most perfect foods? This is mainly because avocados contain over 25 essential nutrients, including iron, magnesium and some essential fatty acids. One clever way to enhance salads with this powerful fruit is to use a tangy avocado mayonnaise! Since avocado already contains fat in its natural form, there is no need to add oil or any other fatty substance to the mayonnaise. Avocado alone is quite enough! Add just a dash of garlic and a squeeze of sour lemon and you have the perfect sauce. If you haven’t tried avocado mayonnaise before, now is the time!

To prepare you need:

  • 2 larger ripe avocados (if using smaller avocados, take 3 pieces).
  • ½-1 tsp Himalayan or sea salt
  • 2 medium-sized cloves of garlic
  • 2 tablespoons freshly squeezed lemon or lime juice
  • food processor, blender or blender (essential for a creamy texture!)

How to make avocado mayonnaise?

Peel the avocado and remove the stone. Then chop the avocado in a food processor or bowl (depending on whether you use a food processor or a blender) and add the garlic cloves, salt and lemon juice. Work until an even silky texture is achieved. You can add lemon juice or salt to taste. Be sure to use a food processor or blender to achieve a silky mayonnaise-like sauce. You can’t get the same result by smashing with a fork.

Serve the avocado mayonnaise with a fresh salad or, for example, oven fries. If you’re a fan of spicy food, you can also add your favourite chilli to the mayonnaise (for example, the mild-flavoured Korean chilli powder Gochugaru).
