Chia pudding is perfect for a light breakfast, a snack or a festive dessert. An easy-to-make, nutrient-dense and truly delicious pudding that combines all that is good and healthy. No cow’s milk, refined sugar or additives, just the power of plants! Try it too! 😉
Quantity: for two
Preparation time: 10 minutes + chia seed swelling time (2-3 hours).
Severity: light
It will take:
- 200g pitted cherries (fresh or frozen)
- 200ml unsweetened almond milk
- 2-3spl maple syrup
- 3spl chia seeds
- pinch of salt (well, a little, to balance the flavours!)
- fresh coin for decoration (optional)
- natural vanilla on request (optional)
How to make chia pudding?
Mix the chia seeds with the almond milk, a pinch of salt, vanilla and 1-2 tablespoons of maple syrup and place in the fridge for 2-3 hours to swell until a custard-like texture forms. Melt the cherries and mix with a spoonful of maple syrup. When the seeds have swelled sufficiently and the desired texture is achieved, serve. Place 3 tablespoons of the pudding in the bottom of the glass and top with cherries (leave some for serving!). Then top the cherries with another layer of custard and top with a few more cherries. Decorate with mint leaves and enjoy immediately!
