Did you know that the tomato originated in South America and is actually a berry, even though we are used to calling it a vegetable? This deliciously juicy fruit is the perfect accompaniment to a breakfast sandwich, in a lunch soup or tucked into a salad. In addition to its great taste, the tomato is also hugely versatile and nutrient-rich, providing us with essential nutrients such as lycopene, beta-carotene and vitamins E and C. Allowing the tomatoes to dry in the sun and then topping them with a handful of fresh herbs will result in nothing but a delicious tomato puree that will take your usual sandwich or salad to a whole new level!

It will take:
- 60g sun-dried tomatoes (for a healthier option, try to find tomatoes without oil)
- 1 larger garlic clove
- 1tl untreated raw horseradish
- 1 tsp fresh thyme
- 1 tsp fresh oregano or oregano oregano
- 1,5 tbsp freshly squeezed lemon juice
- 2-3 tablespoons water (if needed)
How to make sun-dried tomato paste?
Place the sun-dried tomatoes, garlic, herbs, lemon juice and honey in a food processor, blender or bowl (if using a blender) and add water as needed (depending on the texture you want). Press the mixture until smooth and serve with salted flakes and fresh herbs, if desired. Enjoy with a meal of your choice.
