Mashed sweet potato soup

Delicious mashed sweet potato soup for autumn evenings

Sweet potatoes are one of the most powerful vegetables on the planet, helping to stabilise high blood pressure and lower stress levels. In addition, sweet potatoes help the body resist all kinds of pathogens, including cancer-fighting properties. Sweet potatoes are perfect in soups, salads, baked goods and smoothies, as well as snacks and healthy fries. Sweet potatoes are a versatile and simply amazing vegetable! Together with carrots, sweet potatoes make a truly delicious combo for a creamy and pleasantly sweet puree. Garlic and ginger are powerful health bombs that add zest. It will take:

  • 1-2 medium onions
  • 3 finely chopped garlic cloves
  • 1 to 4 cm slice of fresh ginger, sliced to taste.
  • 8 medium sliced carrots
  • 1 to 2 medium-sized sweet potatoes, sliced
  • 1l boiling water or vegetable broth
  • 1-2 orange juice
  • sea salt to taste, pepper
  • fresh herbs (e.g. parsley) for serving, if desired

How to prepare sweet potato puree soup?

Put the chopped onion in a pot with a splash of water and simmer for about 5 minutes. Then add the chopped garlic and ginger and simmer for another 3-4 minutes. Next, add the sliced carrots, sweet potato and water to the pot. Bring to the boil, then reduce the heat slightly. Cook the vegetables over a medium heat until the carrots and sweet potatoes are soft. Then puree the soup using a blender, blender or food processor until smooth. Add the orange juice, spices and mix well. Serve with fresh herbs if desired.
