Red cabbage tacos

Did you know that red cabbage is one of the most nutrient-dense vegetables with its rich vitamin content? Red cabbage is rich in vitamins C, K and B, as well as minerals such as iodine, calcium, potassium, magnesium and iron. In addition, red cabbage is rich in antioxidants, which are vital for our health, making it anti-inflammatory as well as anti-viral and anti-cancer. Plus, it tastes amazing and is great in a variety of salads, soups and tacos!

It will take:

For Tacode:

  • 1 smaller red cabbage head
  • 1-2 medium-sized tomatoes (or a couple of handfuls of cherry tomatoes)
  • ½ finely sliced red onion
  • ½ avocado
  • ½ red pepper + ½ yellow pepper
  • 1 small handful of fresh coriander/ thyme/basil

For mango sauce:

  • 170g mango (fresh or frozen)
  • 2spl lemon or lime juice
  • 2 datlit
  • 3spl bought
  • ¼ teaspoon chilli flakes
  • ½ teaspoon grated ginger
  • blenders/cookers/juicers

How to make red cabbage tacos?

Wash the cabbage and separate the leaves (as much as you like). The most successful way to separate the leaves is to cut the leaf at the root with a knife and start peeling from the bottom. Place the cabbage leaves on the serving tray. Then chop the vegetables and place on cabbage leaves. To make the sauce, place the mango cubes with the dates and spices in a blender or food processor and sprinkle with lemon or lime juice. Add the water and process until a silky texture is achieved. Spoon the dressing onto the cabbage leaves covered with the vegetables and garnish with fresh herbs if desired. Enjoy now!
