These delicious apple bites melt in your mouth! It really is an unrivalled treat that is hard to contain. Sweet apples on a melt-in-your-mouth almond base are just something exceptionally good, truth be told! As always, there is not an ounce of gluten, egg or dairy hidden in this time’s cookies. Nor is there any oil in the recipe – that role is taken by the homemade apple sauce. The ampoule-making process requires a bit of tinkering, but it’s well worth a little tinkering. But if you’re a sweet tooth, feel free to roll up your sleeves and try it out, because, as we all know, taste is king.

How to make apple biscuits?

First mix the dry ingredients – almond flour, starch, coconut sugar and baking powder – in a bowl. Then add the applesauce and shape the dough with your hands. If the mixture is too sticky, add more almond flour (one spoonful at a time). Shape the mixture into balls, wrap in kitchen roll or baking paper and place in the fridge for 30 minutes to set.

In the meantime, prepare the filling. To do this, wash, peel and slice the apple and place all the ingredients for the filling in a saucepan, saucepan or smaller pot. Bring the mixture to the boil, then simmer for 3-4 minutes and set aside to cool.

Then preheat the oven to 180 degrees and line a baking tray with baking paper. Take a ball of dough from the fridge, divide it into 9 equal portions (use a kitchen scoop if you wish) and shape each portion into balls. Place the balls on a baking tray lined with baking paper and, using your fingers, form a space in the middle so that you have what look like little “bowls”. Fill the gap with apple filling (place 1 teaspoon of filling in each gap). Divide the filling between the biscuit cases and then place the biscuits in the oven. Bake for 15-20 minutes. When the cookies are ready, let them enjoy for a while and enjoy!

PS. For homemade apple sauce, do the following: Wash, peel and chop the apples (2-3 small ones, about 200g) and place them in a small pot or saucepan. Add 2-3 tablespoons of water a little at a time to prevent the apples from sticking to the bottom. Simmer the apple cubes over medium heat until soft. Then remove the pot from the heat and, using a whisk, mash the apples into a smooth, silky sauce. You can also pour the apples into a blender or food processor.
