The four versions of maple syrup differ in colour, taste and texture. The differences are due to the different harvesting periods between the beginning of March and the end of April.

Gold. Delicate taste. Light golden colour and mild taste with sweet caramel notes.
Amber. Rich taste. Soft amber colour, rich and aromatic flavour with hints of brown sugar and hazelnut.
Dark. Strong taste. Dark amber colour, strong flavour with hazelnut and caramel notes.
Very dark. Intense flavour. Dark in colour, dense and full-bodied with a dark caramel and liquorice aftertaste.

For example, did you know that maple syrups are categorized into four distinct flavor profiles? The differences between the four types of maple syrup result from the harvest time. This affects all the properties of maple syrup – colour, taste and texture.

Golden maple syrup, with the mildest flavour, is produced at the beginning of the sugar harvest season, in early March, from sap collected from the forests of Quebec, Canada. It is the rarest and most delicate version, with a short and limited production.
Amber is rich in flavour and is produced from the sap harvested in March. This type of maple syrup has more fruity notes.
The dark has a strong flavour. Maple syrup in this category is produced from sap harvested in the middle of the sugar harvest season, in April. It is the most popular version due to its versatility in both sweet and savoury recipes.
The very dark, intense-tasting syrup is produced from maple sap collected at the end of the harvest season, at the end of April. Ideal for those who love more intense flavours – for example in cakes and pastries.

Important information when choosing maple syrup

When choosing maple syrup, be sure to check the list of ingredients. There must be only one ingredient , 100% maple syrup. There are many maple syrup-based blends on the market that also contain other, cheaper sugars. All maple syrups in our online shop are 100% pure and contain only one ingredient.
The maple syrup market, much like the olive oil market, can sometimes attract fraudsters. Just as olive oil is blended with cheaper industrial oils (such as rapeseed oil), maple syrup may be blended with cheaper sugars and glucose syrup, but the other ingredients are omitted from the packaging. A mixture of maple syrup and sugar syrup is sold over pure maple syrup.
In the flavor and quality of maple syrup, as with wines, the entire production process plays a significant role—such as the forest from which the syrup is harvested, the timing of the harvest (which is crucial), the subsequent processing, and the drying method. The quality and taste of maple syrup depends on these and many other aspects. Even between batches, the taste can be noticeably different.

Maple Farm won the Best Maple Syrup Group award at the 2020 Great Taste in England. Maple Farm is also actively involved in preventing the production of fake maple syrup. Maple Farm maple syrup is third-party certified.
