During the spring ramsons season, many ramsons fans must have a question: how to preserve it? Fortunately, ramsons can be stored in the fridge for quite a long time, and you can keep them in the freezer until next spring if finely chopped.

But there is another way to preserve ramsons and that is to make ramsons salt. This way, even on cold and dark autumn evenings, you can revive your memories of spring through the flavours. There is probably no salty food that can’t be seasoned with ramsons salt – easily turn your soups, casseroles, pastas, baked goods, baked potatoes, sandwiches and salads into a special gourmet.

If you wish, add other herbs to the ramsons – this way you get a particularly luxurious herb salt.

  • 400 g (coarse) sea salt
  • 100 g ramsons

How to make ramsons salt?

Chop the ramsons into smaller pieces. Put the ramsons with salt in a food processor or blender and process until a texture you like. Spread the ramsons salt on a baking tray and leave it to dry in a warm place. You can also use a dryer or oven for drying. When drying in the oven, set the oven to 30 degrees and leave the oven door slightly open.

Dry the salt completely and store in a sealed container, away from direct light.
