Melt-In-Your-Mouth Cinnamon Rolls With Date Cream

It probably won’t surprise you to learn that vegetables can be used to make all sorts of exciting dishes, but have you ever tried cinnamon rolls made from sweet potato? Indeed, the world of vegetarian food never ceases to surprise! Combine sweet potato with cassava flour for a deliciously sticky dough that makes mouth-wateringly delicious rolls that you can heartily enjoy as many times as you like. The sweetness comes from the date cream, so you won’t even find added sugar in this recipe. Amazing (and a little unbelievable at the same time), isn’t it?! Try it, the recipe is waiting for you!

  • 100 g Dates (prefer soft and juicy)
  • 3/4 tsp Cinnamon
  • 1/3 tsp Cardamom
  • 60 ml Almond milk or Water

How to make cinnamon rolls?

Peel the sweet potato and cut into cubes. Steam the cubes until soft and leave to cool. Then prepare the date cream. To do this, remove the stones from the dates and soak them in hot water for 10 minutes. Then puree the soaked and strained dates, cinnamon, cardamom and almond milk into a smooth silky cream.

Prepare the dough. To do this, mash the steamed sweet potatoes with a fork or a whisk and mix with the cassava flour, baking powder, almond flour and cardamom. Knead into a smooth dough. NB! The dough should remain a little sticky, but should still come off your hands nicely. If necessary, add a little more flour to the dough.

Place the oven at 180 degrees °C / 356°F. While the oven is heating, line a baking tray or work surface with baking paper and roll the dough into a square of about 40 x 40 cm. If necessary, use a little cassava flour for rolling.

Cover the unrolled dough evenly with date cream. Then cut the dough into eight strips and roll them up one by one. Place the rolls on a baking tin/tray covered with baking paper and bake in the oven at 180 degrees for 30-40 minutes.
