These delicious vegetable patties make a fantastic addition to any dinner or lunch. Whether paired with a fresh salad, steamed vegetables, or even a healthy burger, they complement everything and are incredibly tasty!   1. Wash the vegetables and peel the carrots and potatoes. Steam or boil the potatoes and carrots until tender, then let them cool.
  2. Grate the zucchini using a coarse grater and squeeze out as much moisture as possible (the more you squeeze, the better!). Place the grated zucchini in a bowl.
  3. Once the carrots and potatoes are cool, grate them using a coarse grater and add them to the bowl with the zucchini.
  4. Season the mixture with onion powder, garlic powder, paprika, and dried oregano. If desired, add salt and pepper to taste. Mix well (using your hands is the best method) until you achieve a consistent and cohesive texture.
  5. Shape the mixture into patties of your preferred size and place them on a baking tray lined with parchment paper. Try to leave some space between each patty to ensure they bake evenly.
  6. Bake in the oven at 180°C (350°F) for 45-60 minutes. Allow the patties to cool completely before serving. Enjoy them with your favorite sides!
