Pumpkin seeds
Pumpkin seeds, also known as pepita (from the Mexican Spanish: pepita de calabaza), are an edible seed that come from the pumpkin or certain other varieties of winter sqash. The seeds are usually flat and oval, with two symmetrical axes, a white outer skin, and after removing the skin are slightly greenish. Some pumpkin varieties are skinless and are grown exclusively for their edible seeds.
The seeds are rich in nutrients and calories, being particularly high in fat (especially linoleic and oleic acids), protein, fibre and several micronutrients.
Nutritional value and benefits of pumpkin seeds:
Pumpkin seeds are nutrient-dense, which means that even a small amount provides a lot of valuable nutrients. They contain high quality plant protein, healthy fatty acids (including omega-6 and monounsaturated fatty acids) and fibre to support digestion. In addition, they are a source of essential minerals such as magnesium, zinc, iron, phosphorus, potassium and natural antioxidants.
How to use pumpkin seeds
Pumpkin seeds are very versatile and have a delicate nutty flavour with a fresh note. They have a pleasant crunch when roasted and softness when raw; roasting in a dry pan or in the oven brings out their natural flavour particularly well.

- In smoothies, or used as a garnish
- In yoghurt and vegetarian alternatives
In cooking:

- In pestos and sauces
- As a garnish for soups and vegetable dishes

Pumpkin seeds are naturally gluten-free and suitable for vegans and vegetarians, but may contain traces of other allergens (gluten, nuts, soy, sesame) depending on the production process.
