Creamy and cooling zucchini ice cream
If you’re looking to add more vegetables to your menu, and not just in the form of a salad, this creamy treat could be one of the clever ways to make eating vegetables more fun! Zucchini is mild in flavour and soft in texture, perfect for squeezing into ice cream. Try it and see for yourself!

To prepare you will need:
- 180 frozen zucchini cubes
- 4-6 soft dates without stones
- 100 g frozen apple cubes
- 180 g frozen banana
- 1 tablespoon (heaped) peanut butter (or any other nut butter you like)
- 1-2 teaspoons of carob powder or finely ground chagat
- 2-3 tbsp maple syrup
- 60 g soaked Indian nuts
- 1-2 teaspoons lemon juice (or add to taste)
- 40-50 ml vegetable milk or water (add less or more as needed).
How to make zucchini ice cream?
Place all the ingredients in a blender or high-powered food processor and blitz until smooth and silky. Serve and enjoy immediately!
