Coconut milk has been a staple ingredient in cooking and rituals in South Asian and Pacific cultures for centuries. Among all plant-based milk, coconut milk has the longest and most tradition-rich history—many countries where coconut milk has been a key kitchen ingredient consider it the main “milk” of the population. A delicious vegetable coconut curry is a great family meal and is easy to serve with rice or quinoa. A tasty coconut rice can be made by adding a bit of coconut milk to cooked rice or by cooking the rice directly in coconut milk. Simply add your favorite ingredients and enjoy your coconut rice bowl! Coconut milk is the best substitute for cow’s milk when making rice porridge.
