Millet-slab cake with orange marmalade

A golden sponge base made from millet flour, topped with homemade orange marmalade – naturally gluten-free, refined sugar-free and wholegrain. You will need:
For the cake:
- 2 medium-sized bananas
- 1 cup millet flour (155 g, you can also grind millet flakes)
- 1 orange peel (grated)
- 3 tbsp Maple syrup
- 3 tbsp coconut sugar
- 1½ teaspoons baking powder
- 1 teaspoon natural vanilla powder or extract (optional)
- 1 teaspoon cardamom powder (optional)
To moisten the cake:
- ⅓ cup orange juice
- ⅓ cup of sour cream
For marmalade:
- 2 oranges
- ¼ cup orange juice (approx. juice of 1 large orange)
- ½ cup coconut sugar crumbs
- 2 tbsp maple syrup
How to make millet cake?
Preheat the oven to 200 degrees and line the cake tin with baking paper.
Start by making a cake. To do this, mix millet flour, coconut sugar and baking powder in a bowl. Add vanilla and cardamom if you like. Then pour in the previously mashed banana, 3 tablespoons of maple syrup, the zest of 1 orange (grated). Mix thoroughly and pour the mixture into a cake tin lined with baking paper. Place in the oven to bake for 25 minutes.
While the cake is cooking, prepare the marmalade. To make the marmalade, take two whole oranges, peel them and cut them into small pieces (if you notice any seeds, be sure to remove them). Place the chopped oranges in a small pot or saucepan with the juice squeezed from one of the oranges. Add 2 tablespoons maple syrup and ½ cup coconut sugar. Blend the mixture with a whisk until smooth and bring to the boil. Then lower the heat and let the marmalade mixture thicken over a gentle heat, stirring occasionally to avoid scorching. Be sure to allow a little extra time, as the marmalade can take around 45 minutes to cook.
When the cake is ready, carefully poke tiny holes in the cake with a skewer or fork and drizzle with orange juice and honey mixture for a juicier result.
When the marmalade is ready, place it on the cake. Let cool and enjoy!
