Herbed roasted vegetables with cashew cream

If you want to eat healthy without compromising on taste, this dish is definitely for you! On the plate, delicious roasted vegetables meet herby cashew cream – a mouth-watering combination that tastes downright delicious. Flavour is added by a variety of fresh and dried herbs, and the vegetables require no oil for roasting. Try it for yourself!

To prepare you will need:

For vegetables:

  • 700 g potatoes
  • 2 medium-sized red peppers
  • 1 jar/pack of chickpeas (drained)
  • 2 red onions
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 2 teaspoons garlic powder
  • salt (to taste)

For the cashow cream:

  • 150 g Indian nuts + water for soaking
  • 140 ml water (add more if necessary, but make sure the cream does not turn into a liquid sauce!)
  • 50 ml lemon juice
  • 1 clove garlic
  • 350-450 g fresh cucumber (grated)
  • 30 g fresh dill
  • 35 g green onions
  • sea salt (to taste)

How to prepare vegetables?

First, put the cashow in hot water (about 15 minutes is enough). Then preheat the oven to 180 degrees and line a baking tray with baking paper and prepare the vegetables. To do this, wash and chop the potatoes, onions and peppers, and drain and rinse the chickpeas under running water. Place all the vegetables in a large bowl and add the seasonings. Mix thoroughly and place on a baking tray lined with baking paper. Roast the vegetables in the oven at 180 degrees for 25-30 minutes.

While the vegetables are cooking, prepare the cashow cream. To do this, crush the nuts and place them in a blender with the rest of the cream ingredients. Blend until the cream reaches an even, silky texture. Pour the cream into a bowl and add the chopped green onion, dill and grated fresh cucumber. NB! Squeeze the excess water out of the grated cucumber beforehand to prevent the cream from becoming runny.

To serve, place the cashow cream on the plate first and then top with the roasted vegetables. Enjoy immediately, this is the best way to enjoy a meal!
