Delicious peach treat with coconut cream

If you’re looking for something simple, refreshing and yet truly enjoyable, this delicious peach treat with coconut cream is for you. The combination of ripe, sweet peaches and velvety coconut cream creates a melt-in-your-mouth experience that takes little effort to prepare but looks like a fine dessert. The creamy softness of the Indian nuts and the delicate sweetness of the maple syrup balance the juicy freshness of the peaches, making this dessert the perfect summer treat to enjoy with your family or surprise guests.

Preparation time: 10 minutes (+ time for the peaches to freeze and the sauce to set).

To prepare you need:

  • 4 ripe peaches (frozen!)
  • 60 g soaked cashews (soak in hot water for 20 minutes)
  • 200 ml full fat coconut cream (keep in the fridge overnight in advance)
  • 40 ml coconut oil
  • 1,5 tbsp maple syrup
  • 1 teaspoon lemon juice

 

How to make it?

Place the peaches in the freezer and prepare the cream. To do this, place the previously soaked cashews, coconut cream, coconut oil, maple syrup and lemon juice in a blender. Blend until smooth, cover with a lid and place in the fridge overnight to set. Note that the cream is liquid when it is made, but in the fridge it turns into a solid, spreadable cream that can also be whipped. When the peaches are frozen and the cream is ready, place the cream on a serving dish of your choice or in the bottom of a bowl and grate the frozen peaches on top. To serve, drizzle with a little more maple syrup and garnish with mint leaves, if desired. Enjoy immediately!

NB! If you also want to add a peach flavor to the cream, you can mix some grated peaches into the cream before serving.
