Cucumber noodles with Italian tomato salad

This recipe is an easy and fun way to prepare healthy food for yourself and your loved ones. The cucumber noodles are deliciously juicy, and the tasty Italian tomato salad adds zest to this refreshing meal.

To prepare you need:

  • 1 large cucumber
  • 200 g cherry tomatoes
  • 2 cloves of garlic
  • 1 handful of fresh basil
  • 2 tablespoons red onion
  • 1/4 teaspoon chilli flakes (optional)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon of honey
  • a spiral cutter or mandoline cutter
  • 2 medium bowls

How to make cucumber noodles?

Peel the cucumber and make noodles using a spiral slicer or mandoline. Put the cucumber noodles aside. In another bowl, chop the tomatoes, garlic (finely), basil and red onion (finely). Add the chilli flakes (if using), lemon juice and honey and mix well. Serve and enjoy!
