Delicious and Crispy Chanterelle Pizza with Cashew Cheese

What is chanterelle season without a delicious chanterelle pizza? This pizza truly tastes like the real deal, yet it is 100% plant-based, grain-free, and yeast-free. Despite this, it even features a “cheese” that complements the flavor combination perfectly! No more feeling left out during movie nights when others are snacking—prepare a healthy pizza for yourself and share it with friends!

For the pizza crust:

  • 500g steamed and cooled potatoes
  • 80g potato starch
  • Sea salt (to taste)

For the toppings:

  • 1 tsp dried herb mix
  • Sea salt (to taste)
  • 100g concentrated tomato paste
  • 50g cashews
  • 3-4 tbsp water
  • Juice of ½ lemon
  • ½ tsp onion and garlic powder
  • A handful of fresh basil
  • 120g cherry tomatoes
  • 30g onion
  • 200g fresh chanterelle mushrooms
  • 1 tsp maple syrup or coconut sugar

How to make chanterelle pizza?

For the crust:

  1. Preheat the oven to 180°C (350°F) and prepare the pizza crust. Mash the steamed potatoes with a potato masher or fork, and mix in the potato starch. Knead the dough with your hands until you achieve a cohesive dough ball.
  2. Place the dough ball on a baking sheet lined with parchment paper and shape it into a pizza base, about 0.5-1 cm thick (you can also make several smaller pizzas if desired). Bake the crust at 180°C (350°F) for 30-35 minutes, or until it has a golden top. While the crust is baking, prepare the toppings.

For the tomato sauce:

  1. In a small bowl, mix 100g of concentrated tomato paste with maple syrup or coconut sugar, dried herbs, and sea salt to taste.

For the cashew “cheese”:

  1. Place the cashews in a blender and add the juice of half a lemon, 3-4 tbsp of water, sea salt, onion powder, and garlic powder. Blend until smooth.

For the remaining toppings:

  1. Chop the onion, halve the cherry tomatoes, and sauté the chanterelle mushrooms in a pan (without oil).

To assemble the pizza:

  1. Once the crust is baked, spread the tomato sauce over the base. Next, layer on the cashew “cheese,” cherry tomato halves, chopped onion, and sautéed chanterelle mushrooms. Optionally, sprinkle with additional herbs if desired.
  2. Bake the pizza for another 10 minutes at 180°C (350°F). Allow the pizza to cool slightly, then serve with fresh basil and enjoy!
