Zucchini and Sweet Potato Stew

It’s a meal that’s basically a do-it-yourself meal – just put the ingredients in a pot to simmer and in 15-20 minutes it’s ready to serve. You’re guaranteed a hearty bite to eat and a health boost! Zucchini, on the other hand, takes care of the intestinal tract, helps to eliminate pathogens and promotes the absorption of nutrients. Quantity: for 1-2 persons

Preparation time: 30 minutes

You will need:

  • 1 cup chopped onions
  • 2 ½ cups of diced sweet potatoes
  • 3 cloves of garlic (crushed)
  • 2 ½ cups of diced zucchini cubes
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • 1 teaspoon paprika powder
  • ½ teaspoon chilli flakes
  • 1 cup sliced tomatoes
  • 2 tablespoons tomato paste (no additives)
  • 1 cup of hot water
  • ¼ cup chopped coriander leaves


How to make a stew?

Place the onion, sweet potato and garlic in a pot over medium heat. Heat for 3-5 minutes until onions are soft. If the vegetables tend to stick to the bottom, add a little more water.

Then add zucchini, ground cumin, coriander, turmeric, paprika, chilli flakes, tomatoes, tomato paste and hot water. Mix thoroughly. Cover the pot with a lid, lower the heat and simmer for another 10 minutes.

Remove the lid and simmer for a further 10 minutes, until the sweet potato is soft and the stew has thickened. When serving, sprinkle with fresh coriander.
