A light summer salad, perfect for a healthy summer barbecue or as a stand-alone meal. Crunchy olives and creamy avocado add a Greek twist to the salad. The crunchy vegetables, on the other hand, add a zesty colour and texture to the salad. Lemon adds a tangy note and fresh herbs add freshness. Simple but truly delicious and worth a try!

To prepare you need:

  • 40 g red onions
  • 200 g fresh cucumber
  • 100 g yellow peppers
  • 100 g red peppers
  • 200 g cherry tomatoes
  • 80 g avocados
  • 35 g black olives
  • small handful of fresh thyme
  • 3 tablespoons freshly squeezed lemon juice
  • sea salt and pepper (to taste)

How to prepare a summer salad?

Wash and chop the vegetables and thyme and place in a large bowl. Pour in the lemon juice, season with salt and pepper and mix well. Enjoy immediately!
