Melt-in-your-mouth apricot-orange pancakes with coconut and almonds

We believe that healthy food doesn’t have to be boring or tasteless, quite the opposite! We believe that healthy food can be exciting, creative and undoubtedly delicious! The healthy apricot and orange muffins we’re about to share with you are proof of this. These delicious dumplings do not contain a gram of added sugar, synthetic flavourings or anything else unnecessary, but are really delicious! Dried apricots combined with orange and deliciously crunchy almonds make an unrivalled combo to surprise your taste buds. Try it!

For preparation:

  • 200g soft dried apricots (without sulphur dioxide and additives)
  • 70g almond
  • 50g coconut flakes
  • 3 teaspoons grated orange zest
  • ½ teaspoon grated fresh ginger
  • 1 tablespoon freshly squeezed orange juice
  • ½ teaspoon cinnamon
  • 4 tablespoons ground almonds or coconut flakes (for decoration)

How to make apricot jam?

Place the almonds in a food processor and blitz into smaller pieces. Then add all the remaining ingredients, except the coconut or almond flakes for decoration, and process until the mixture forms a smooth, sticky mass. When the mixture is ready, roll it into handy, handy balls and roll them in coconut or almond paste, if desired. Place the balls on a tray and enjoy straight away, or leave to stand in the fridge for a few hours – apricot souffles taste especially delicious cold! Store in an airtight container in the fridge.
