Walnut bolognese

Meatless bolognese with walnuts and mushrooms

A dish that, at first glance, is hard to believe is really a vegetable dish. If you’re looking for a wholefood alternative to the classic bolognese but lentils aren’t your thing (or you just need a change), this mushroom and walnut-based sauce is for you! To prepare you will need:

  • 200 g champignons
  • 100 g walnuts
  • 1 red onion
  • 1 medium-sized carrot
  • 2 fresh garlic cloves
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 pack of crushed tomatoes
  • 1 tbsp coconut aminos coconut sauce (optional)
  • handful of fresh basil (to serve)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon freshly squeezed lemon juice
  • pinch of chilli flakes (optional, on request)
  • 400 g gluten-free spaghetti
  • ¼ cup water or vegetable broth (use as needed)
  • food processor

How to prepare walnut bolognese?

Put the mushrooms, walnuts, onion, carrot, and garlic in a food processor and gently blend until you achieve a mixture with a grainy texture. Be careful not to puree the mixture – aim for a ‘mince-like’ texture. Then heat the pan and pour the mixture into the pan with the dried herbs. If necessary, add a little more water if you see the mixture starting to stick to the pan. Cook the mixture in the pan for a few minutes, and then add the chopped tomatoes, coconut sauce, and salt and pepper. If the mixture seems too thick, add a little more water or vegetable stock. Simmer for another 10-20 minutes until the sauce has thickened and the excess liquid has evaporated. While the sauce is cooking, cook the spaghetti according to the instructions on the packet. When the sauce is ready and the spaghetti is cooked to your liking, serve the spaghetti with the bolognese.
