Oil-free vegan mayonnaise made from cashews
An oil-free vegan mayonnaise that’s the perfect all-natural substitute for anywhere that would otherwise use a traditional sour cream or mayonnaise-based sauce. The cashews are neutral in flavour and become deliciously creamy when blended with water, perfect for making a ‘mayonnaise’. You can adjust the flavour to your liking and all you need is cashews, water, a little lemon juice and your favourite seasoning. Try it and see for yourself!

Preparation time: 5 minutes (+ time to soak the nuts).

To prepare you need:
- 200 g soaked cashews (soak in hot water for 20 minutes or overnight)
- ½ the juice of a smaller lemon (if you prefer a more or less acidic sauce, add more or less lemon juice as required).
- 280 ml water (add less or more depending on the texture of the sauce)
- salt (to taste)
How to make vegan mayonnaise?
Place the pre-soaked (ideally 4-8h) cashews in a blender with the lemon juice, water and salt and blend until silky. If your blender needs more water or you want a more liquid sauce, feel free to add more water as needed. Season to taste. You can add chopped dill, chilli, mustard powder, garlic or anything else you like.
