Spicy CHAI biscuits with almond flour
Delicious chai cookies enriched with spices
Rich, spice-infused biscuits that are addictively good – so good, in fact, that they taste damn good! 😉 Indeed, these are biscuits that, at first glance, raise doubts as to whether they are healthy biscuits. The flavour is rich, crispy and mouth-watering – just what a good biscuit should taste like. The spices add a unique taste which gives the biscuits a special touch. If you’re feeling like some rich biscuits are missing from your weeknight, weekend or festive gathering, these might just be the biscuits for you! 😉

To prepare you need:
- ¼ cup soft coconut oil (54 g)
- 2 tbsp maple syrup (42 g)
- ½ cup of coconut sugar (90 g)
- 1 cup almond flour (96 g)
- ⅓ cup rice flour (53 g)
- ⅓ cup oat flour (51 g)
- 1 ½ teaspoon cinnamon (3 g)
- 1 teaspoon ground cardamom (2 g)
- ¼ ground cloves (0,5 g)
- ½ teaspoon of ground ginger (1 g)
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 2-3 tbsp unsweetened almond milk (30-45 g)
For simplicity you can use 2-3 tsp Chai Latte Spice Blend instead of cinnamon, cardamom, cloves and ginger.
How to make Chai biscuits?
In a bowl, first mix together all the dry ingredients, then add in the coconut oil and almond milk. Mix until a smooth, dense dough forms, then refrigerate for 20 minutes. In the meantime, line a baking tray with baking paper and when the mixture has set, form small balls between your fingers and flatten them slightly by spreading them on the baking tray. Be sure to leave room for the cookies on the baking tray, as they will spread out as they bake and may otherwise collapse.
Bake the biscuits in a 180 degree oven for 16-18 minutes until golden brown. Then remove the biscuits from the oven and let them cool for 5 minutes on a baking tray before removing them from the tray.
The biscuits are soft when they come out of the oven and can fall apart, but when they cool they become crispy and very firm. Store the biscuits at room temperature in an airtight container.
