Raw wrap with fresh vegetables

Would you like to enjoy delicious wraps, but in a lighter, gluten-free way? If so, these raw wraps are definitely worth a try. A deliciously fresh appetizer for a snack or as a side dish. Plus, you can let your imagination run wild and top up the contents of the wrap to your liking or adapt the recipe to suit what’s in the fridge at the moment.

To prepare you will need :

  • 12 larger romaine lettuce leaves
  • ½ fresh long cucumber (cut into thin sticks)
  • 1 medium-sized red pepper (cut into fine sticks)
  • a handful of radishes (cut into thin strips)
  • Food wrap or rice paper

How to make raw wraps?

Wash and dry the lettuce leaves with kitchen paper. Then remove the bottom hard edge (where the root part attaches). Place three lettuce leaves side by side, so that the leaves are halfway on top of each other, forming one large lettuce leaf. Then place the cucumber, pepper and radish strips in the middle of the lettuce leaves and carefully roll up the lettuce leaves. Roll tightly, applying slight pressure so that the contents do not fall out of the wraps. Wrap the wrap in a food wrap (or use rice paper) to keep the wrap in shape and prevent it from falling apart before eating.

Cut the wraps in half and serve with whatever you like. Prepare a dipping sauce with lemon juice, honey and chilli or enjoy with Indian nut mayonnaise. The wraps also taste great with coconut aminos coconut sauce.
