Gluten-free apple donuts (Recipe for Medical Medium)

Doughnuts that don’t need any baking, ready in just minutes?! Exactly! These are raw doughnuts made with apples, dates and a few toppings of your choice. It’s easy to make and incredibly delicious. As a bonus, they’re a healthy snack that won’t do you any harm.

If you’ve been dreaming of doughnuts, these sweet and juicy apple doughnuts could become your new health-friendly favourite! Of course, this recipe doesn’t offer the softness of bread and oily fingers, but the taste sensation is guaranteed.

  • fresh berries (raspberries and blueberries are particularly good)
  • coconut flakes (stick to the berries if you prefer a fat-free version)
  • if you like, you can also add dried fruit (such as raisins and mulberries) or anything else you like – the choice is yours!

 

How to make apple donuts?

Fill a large bowl with cold water and add half the lemon juice. Then cut the apples into slices about 0.5 cm thick. Remove the core from the centre of each slice using a special tool or, for example, a bottle cap. It is important to leave a circular space in the middle of each slice. Immediately place the rings in a bowl of lemon water to prevent them from turning brown on contact with air.

In a blender, food processor or whizzer, blend the dates, vanilla (if using), ½ cup water and the remaining lemon juice until smooth. Process until a thick and creamy “caramel sauce” is formed.

Take the apple rings out of the water, spread the caramel sauce on each ring and top with whatever toppings you like.

NB! If using dry dates, soak them in warm water for 10-15 minutes before blending – this will soften the dates and make them easier to process.
