“NO-BAKE” Oatmeal bars with blueberries
Really good “flapjack” style bars with blueberries
We’re convinced that these bars will win the heart of even the biggest sceptic, who doesn’t think much of healthy sweets! 😉 These blueberry and oatmeal bars are a combination of creamy nut butter, chewy oatmeal and juicy blueberries that will melt in your mouth! In texture and flavour, these bars are reminiscent of a “flapjack” style treat, but free from any vegetable oils or animal products. They are gluten-free, wholefood and contain no grams of refined sugar. The sweetness is added by a delicious maple syrup instead of sugar. No need to bake either – just mix, press into a mould and wait for the mixture to set. Give it a try and let us know how you like it! 😉

For preparation:
- ⅓ cup maple syrups (106 g)
- 2 tbsp coconut oil (27 g)
- ⅓ cup peanut butter (85 g)
- 1 cup gluten-free oatmeal (90 g)
- 1 cup of oat flour (92 g)
- 1 cup blueberries (150 g)
- ¼ cup water (60 g)
How to make the bars?
First put the blueberries in a pan with the water and simmer until the blueberries start to break down slightly and the water has evaporated completely. Then set the blueberries aside for a moment and mix all the remaining ingredients. Separate about ¼ of the resulting oatmeal mixture and press the rest into the bottom of a baking tin lined with baking paper. Spread the stewed blueberries on top and drop the oat mixture you set aside on top of the blueberries, pressing lightly with your fingers so that the crumble sticks to the blueberries. Then refrigerate the loaf tin for at least a couple of hours (ideally the mixture should be kept in the cupboard overnight). To serve, cut into batonni of your preferred size and enjoy. Store the batons in an airtight container in the fridge.
