Fat-free green pea guacamole
If you’re a fan of peas, now is the time to take note and make sure you try this recipe: you’re looking at a green pea “guacamole”. It’s true, the pea guacamole doesn’t have the creaminess and flavour of avocado, but it’s still delicious! It is just as easy to prepare and the result is truly delicious and filling. Combined with crispy baked potatoes, it’s a delicious amuse-bouche to enjoy as a casual lunch or dinner, or to pack for a picnic or outing.

Preparation time: 35 minutes (if using pre-steamed potatoes).

To prepare you need:
- 750 g steamed potatoes (with or without skin)
- 300 g frozen-thawed green peas
- 40 g onions (chopped)
- small handful of fresh parsley (chopped)
- 2 teaspoons onion powder
- ½ teaspoon garlic powder
- salt (to taste)
- fresh chilli (chopped, optional)
- lemon juice (¼ of a small lemon or to taste)
How to prepare pea guacamole?
Steam the potatoes and place them on a baking tray lined with baking paper. If you are using larger potatoes, cut them in half. Then flatten the potatoes with your hand or with a glass spatula, seasoning with salt if desired. Bake the potatoes at 200 degrees for 20 minutes or until golden brown. While the potatoes are cooking, prepare the pea guacamole. To do this, place the thawed green peas in a bowl, add the lemon juice, salt and onion powder and process with a blender to a chunky puree (you could also use a potato masher or food processor). Finally, add the chopped onion, parsley and chilli and serve with crispy baked potato wedges.
