Light and delicious Greek summer salad
A light summer salad, perfect for a healthy summer barbecue or as a stand-alone meal. Crunchy olives and creamy avocado add a Greek twist to the salad. To prepare you need:
- 40 g red onions
- 200 g fresh cucumber
- 100 g yellow peppers
- 100 g red peppers
- 200 g cherry tomatoes
- 80 g avocados
- 35 g black olives
- small handful of fresh thyme
- 3 tablespoons freshly squeezed lemon juice
- sea salt and pepper (to taste)
How to prepare a summer salad?
Wash and chop the vegetables and thyme and place in a large bowl. Pour in the lemon juice, season with salt and pepper and mix well. Enjoy immediately!
